The holiday season is right around the corner, so that means it’s time to start baking ALL the festive, seasonal treats.
You know my undying love for pumpkin baked goods, but I also have an affinity for holiday flavors as well. We’re talking mint chocolate, maple spice, white chocolate peppermint, sugar cookie, salted caramel, butterscotch….and especially GINGERBREAD.
Gingerbread is another one of those flavors I could enjoy all year round! Something about that mix of spices (ginger, cinnamon, nutmeg, cloves, and of course sweet sweet molasses!) just fills me with warm comfort when it comes to baked goods.
Well lucky for me (and you!!!), No Cow has brought some gingerbread goodness to the world for us all to enjoy just in time for the best season of the year.

The Perfect Holiday Treat
I always get inspired to make new treats when No Cow releases new products and this time is no different! The Gingerbread Bar is just SO good and immediately made me think of making some food gifts for the holiday season. Caramel Corn is such a popular stocking stuffer or food gift to make for family and friends, but the traditional version is FILLED with sugar (usually made with corn syrup!), is not vegan, and is very low in protein. It’s delicious, but not very wholesome. A Healthy Helper makeover was definitely needed for this classic holiday treat and thanks to No Cow, I was inspired to do just that!
Gingerbread Caramel Popcorn
Gingerbread Caramel Popcorn is a TOTAL upgrade on traditional caramel corn with added gingerbread spices and a fun seasonal twist! Simply made with popcorn, nut butter, date syrup, vanilla, and spices, my version is:
- no added sugar
- full of protein (thanks to the new No Cow bars!)
- high fiber
It’s also the perfect treat to make or give as a gift for the upcoming holiday season. Grab the recipe below and get ready to impress all your loved ones with this indulgent-tasting treat that’s actually good for you!!
Gingerbread Caramel Popcorn
- Prep Time: 10 minutes
- Cook Time: 60 minutes
- Total Time: 1 hour 10 minutes
- Yield: 6 cups 1x
- Diet: Vegan
Preheat oven to 250 degrees F and line a baking sheet with parchment paper. In a medium mixing bowl, stir together nut butter, syrup, vanilla, and spices. Microwave for 30 seconds, whisk, and microwave for another 30 seconds. Whisk again to make sure everything is evenly combined. Place popcorn and walnuts in a large mixing bowl. Pour liquid mixture over popcorn and walnuts and mix together (using your hands is best!) until the popcorn is evenly coated.
Scoop popcorn onto the prepared baking sheet. Bake for 60 minutes stirring every 15 minutes. Remove from oven and let cool completely before pouring into a bowl. Sprinkle chopped No Cow Bar onto popcorn and toss to combine!
